Greek Cucumber Salad Recipe
  1. In a large bowl, combine cucumber, diced green peppers, sliced red onion, and halved grape or cherry tomatoes.

  2. Toss in the Kalamata olives. Crumble the feta cheese over the salad.

  3. In a small bowl, whisk together the olive oil, red wine vinegar, Dijon mustard, garlic, oregano, sugar, salt, and pepper.

  4. Pour the dressing over the salad and gently toss to combine. Allow the salad to sit for 15-30 minutes before serving to let the flavors meld together. Sprinkle extra feta on top, if desired. Enjoy!
