Red Chilaquiles
  1. Combine all salsa ingredients in a blender or processor, and blend until smooth.

  2. Heat oil or medium in a large pan, add the salsa and cook, simmering 7-10 minutes.

  3. When ready to cook, put some salsa in a pan, bring to a simmer and add tortilla chips - mix the sauce and chips together to heat through coating well.

  4. Plate the chips/salsa, crumble some cotija over the top, add the eggs and garnish with cilantro.
