Pineapple & Carrot Salad
  1. To make the dressing, put all the dressing ingredients in a mason jar and shake away till combined well. Alternatively, put it all in a bowl and whisk well.

  2. Toast the cashews slightly on the stove top till light brown.

  3. Combine all the ingredients in a large salad bowl and toss with dressing till combined well.Refrigerate for an hour at least before serving. Serve cold!
