Cato's Globi
  1. Mix the wheat flour, cheese and eggs together in a mixing bowl by hand or in a mixer.

  2. Knead the dough for a few minutes and then let it sit for 15 – 30 minutes.

  3. Fill a pot with lard or cooking oil and heat it on medium for approximately 5 – 10 minutes.

  4. Shape your globi into 1" sized globi or smaller.

  5. Drop four or more globi dough balls at a time into the hot oil.

  6. Deep-fry the globi until they are a dark golden brown, approximately 5-10 minutes.

  7. Remove the globi from the oil and place them on a platter lined with a tea towel.

  8. Dress the globi with warm honey and dust them with poppy seeds.
