
Season the chicken breasts with salt and pepper.
Heat olive oil in a skillet over medium heat.
Add the chicken and cook for 5-7 minutes per side, until cooked through.
Remove the chicken from the skillet and set aside.
In the same skillet, sauté the garlic and onion until fragrant and translucent.
Add the diced tomatoes and chickpeas, and cook for 2-3 minutes.
Return the chicken to the skillet and add the lemon juice and chopped parsley.
Serve the chicken and vegetable mixture warm, or use it to make a sandwich with hummus.
