Seven Minute Frosting
  1. In a large mixing bowl, combine 8 oz granulated sugar, 4 large egg whitesm ½ teaspoon cream of tartar, and ¼ teaspoon table saltSet the bowl over a pan of barely simmering water, making sure the bottom of the bowl doesn't touch the water. Whisk the egg whites until the temperature reaches 160°F.

  2. Remove the bowl from the heat and add 1 tablespoon vanilla extract. Whip the whites on high speed until stiff peaks form and the whites are cooled. About 4-5 minutes.

  3. Use immediately as the frosting will stiffen upon standing.
