
In a bowl, add 1 tbsp each of fresh garlic, parsley, chives, and thyme.
Add the juice of ½ a lemon, 1 tsp Dijon mustard, 1 tsp paprika, 1 tsp Worcestershire sauce, 1 tsp chili flakes, and salt and pepper to taste.
Mix in 6 tbsp of light mayonnaise and mix well. Set some aside for spreading on bread and sandwiches.
Marinate chicken thighs in the cowboy butter for 1 hour to overnight.
Air fry the chicken thighs at 385°F for 16 minutes, flipping halfway through, until an internal temperature of 165°F is reached.
In a container, add 1 tbsp each of diced cucumber, cabbage, and jalapeño.
Add dill, pink Himalayan salt, parsley, chili flakes, red wine vinegar, and light mayo. Shake well and enjoy.
