Homemade Marshmallows
  1. Line a 9x13 pan with parchment paper or grease with coconut oil.

  2. In a stand mixer, add ½ cup warm water and gelatin. Stir until just combined.

  3. While gelatin is sitting, add the remaining ½ cup water in saucepan with honey and salt. Whisk and bring to a slight boil.

  4. Continue to whisk and boil for 8 minutes.

  5. After the maple water mixture is done, turn the mixer on low, and slowly pour the mixture into the gelatin.

  6. Add the vanilla then turn the mixer back on and beat until soft peaks form (8-15 minutes).

  7. It will be liquidy at first but turn thick and form peaks. Be careful not to overmix and let the marshmallows set too much.

  8. Quickly pour the mixture into your pan, smooth out, and let set for a minimum of 4 hours or preferably overnight.
