
Cut the bacon into bite-size pieces and sauté it, remove it with a slotted spoon and place it on paper towels.
Sauté all of the veggies in the bacon fat and salt and pepper well.
Combine all of the remaining ingredients in an aluminum pan. Add in the sautéed veggies and stir well. Top with the bacon.
Smoke at 250° until hot throughout, 2-3 hrs.
You can also bake these at 350 until hot.
