
Dice the potatoes into small cubes (or into finger length strips) and wash them well with cold water. Transfer them to a bowl with ice water and let them sit in the ice water for a few minutes. This helps remove excess starch and helps ensure that the potatoes crisp up nicely when cooked.
Drain the potatoes and pat dry very well. Try to remove as much moisture as possible. If the potatoes are too moist, they will be soggy rather than crisp when cooked.
Coat the potatoes in oil, garlic powder and black pepper and cinnamon.
Place the potatoes in the air fryer basket. Try to make sure that the potatoes do not overlap too much.
Cook the potatoes at 400 degrees F for 13-15 minutes, shaking the basket halfway through.
