Crispy Smashed Potato Bake
  1. Preheat oven to 200c

  2. Boil your potatoes until soft

  3. Prepare your 9 inch dish. Add potatoes to the dish and smash them so you sore as and cover the dish

  4. Drizzle some oil over the potatoes and season with salt and pepper

  5. Add the spinach, pepper and tomatoes

  6. Mix the eggs with the milk and pour the mixture over the vegetables

  7. Top with cheese and bake for 25-30 minutes
