Cajun Chicken Thighs In A Creamy Sauce
  1. Season the chicken thighs with the Cajun seasoning of choice, and dice the onion and garlic.

  2. Measure out the cream, butter, spinach, and cheeses.

  3. Preheat a pan on high heat, and add olive oil and seasoned chicken. Sear the chicken on both sides.

  4. Reduce heat to medium and remove the chicken.

  5. To your pan add the diced onion and garlic. Cook until the onion is soft.

  6. Add the butter, cream, last of the cajun seasoning, and cheese. Whisk to combine.

  7. After the cheese has melted add the chicken. Cook on one side for 2.5 minutes.

  8. Add the spinach and flip the chicken and cook to desired doneness (approximately another 2.5 minutes).
