Copycat Starbucks Lemon Loaf

2 eggs

¾ cup sugar

½ cup vegetable oil

2 tsp lemon extract (optional)

Lemon rind of one lemon

3 tbsp lemon juice (½ large lemon)

¾ cup light sour cream or plain yogurt

1 ¼ cup all purpose flour

2 tsp baking powder

½ tsp baking soda

1 cup icing sugar

1 ½ tbsp lemon juice

Select all/reset

Add eggs, sugar, oil, lemon extract (optional), lemon rind, lemon juice and mix well.
Add sour cream, flour, baking powder, baking soda and mix just until combined.
Pour into a 9"x5" loaf pan lined with parchment paper and bake at 350F for about 30-40 minutes or until tester comes out clean. Let cool.
Icing: mix icing sugar with lemon juice and mix well. Pour over cooled loaf and enjoy!
