
Preheat the oven to 200°C (400°F) and line a baking tray with parchment paper.
Cook garlic in olive oil until fragrant, add spinach and cook until wilted. Season with salt and pepper, then let it cool.
In a bowl, mix spinach, ricotta, mozzarella, and Parmesan cheeses.
Unfold the puff pastry, spread the cheese and spinach mixture, roll it into a log, and seal the edges.
Slice the log, place the slices on the baking tray, brush with egg wash, and sprinkle sesame seeds.
Bake for 20-25 minutes until puffed and golden brown.
