Old-fashioned Baked Rice Pudding
  1. Preheat oven to 350°F.

  2. Combine rice, eggs, milk, sugar, lemon peel, vanilla and salt in a 2-quart baking dish. Set dish in a larger pan. Fill larger pan with hot water, half-way up side of baking dish.

  3. Bake pudding for 1 hour, until a knife inserted near the center of the pudding comes out clean.

  4. Serve pudding hot or cold.
