French Onion Chicken
  1. Preheat your oven to 400°F (200°C).

  2. Season the chicken breasts with salt and pepper, coat in flour.

  3. Place an oven proof heavy pan, over medium-high heat. Add olive oil and 1 tablespoon butter and once hot, brown the chicken and cook for about 5 minutes on each side, or until they are nicely browned. Remove the chicken and set aside.

  4. In the same pan, add more butter only if necessary, add the sliced onions and cook over low until they become caramelised and dark golden brown, which will take around 15 minutes constantly stirring.

  5. Add the grated garlic, cook a little longer then pour in the white wine. Stir well and reduce by half.

  6. Return the chicken to the skillet and sprinkle grated cheese on top of each chicken breast.

  7. Transfer the pan to the preheated oven and bake for about 20 minutes, or until the chicken is cooked through and the cheese is melted. Serve your delicious French Onion Chicken on top of the caramelised onions.
