  1. Heat olive oil in a large, deep pot over medium-high. Add in minced garlic, diced onion, chopped celery and carrots, along with Italian seasoning, smoked paprika, salt, and pepper. Cook for about 7 minutes, stirring every minute or so.The veggies do not have to fully cook here - they will continue to cook as you add the liquids in!

  2. Next, stir in the diced tomatoes, vegetable broth, tomato paste, and kale. Cover and bring the liquid to a gentle boil.

  3. Once boiling, stir in the dry orzo. Set your timer for 7 minutes and let the orzo cook, uncovered.

  4. Once the orzo has cooked, turn off the heat. Stir in the grated parmesan and your desired protein (if using - see notes). Season with additional salt and pepper, as needed. Serve hot!
