Lentil Bread
  1. Soak the lentils in water for at least 6 hours or overnight until soft.

  2. Drain and rinse the soaked lentils thoroughly.

  3. Add the soaked lentils, cottage cheese, water, and baking powder to a blender or food processor. Blend until the mixture is smooth and well combined. Optionally, add in any herbs or seasonings of your choice.

  4. Preheat your oven to 180°C (350°F). Grease a 2lb loaf pan (approximately 20cm x 10cm) or line it with parchment paper.

  5. Pour the batter into the prepared loaf pan, smoothing the top with a spatula.

  6. Bake for 60 minutes, or until the bread has risen and a toothpick inserted into the center comes out clean.

  7. Allow the bread to cool completely in the pan before slicing.
