Cut chicken into bite sized cubes and place aside.
Put water, onions and garlic in sauce pan and cover. Low heat 15 min.
Let onion mixture cool completely and add to blender with milk and blend into fine paste.
Heat oil on medium high heat and add chicken and sauté until color changes.
Add in onion mixture and cook out water until oil separates.
Add spices, chilies and ginger - mix and cook for a couple minutes.
Turn heat down to low and fold in heavy cream.
