Take chicken out 30 min before cooking.
Season each side with the seasoning. Rub corn starch all over the surface of each side (corn starch gives it a delicious texture and prevents it from sticking to the skillet).
Heat oil in a large skillet over medium-high heat. Sear the chicken in batches for 5-8 minutes per side (depending on thickness), until a gold-brown crust has developed (no color, no flavor).
