Preheat oven to 350° and line a baking sheet with parchment paper.
In a sauce pan, melt the butter over low heat.
Stir in the brown sugar and granulated sugar until well combined.
Remove from heat and let cool slightly. Stir in the egg and vanilla extract.
In a separate bowl, combine the rolled oats, flour, baking powder, and the salt.
Gradually add the dry ingredients to the wet ingredients, mixing until well, Incorporated.
Drop teaspoonfuls of the cookie dough onto the prepared baking sheet spacing 2 inches apart
Bake for 8 to 10 minutes or until the edges are golden brown
Let the cookies cool on the baking sheet for five minutes before transferring to a wire rack to completely cool.
