No Bake Lemon Truffles
  1. Combine the ground almonds, ground desiccated coconut, lemon juice, lemon zest, refined coconut oil, maple syrup, vanilla extract and salt in a bowl and mix well until fully combined.

  2. Roll the mixture into small balls and place on a parchment-lined baking sheet.

  3. Melt the white chocolate and dip the truffle balls into the chocolate, coating them fully.

  4. Place the coated truffles back on the baking sheet and refrigerate until set.
