Broccoli Stuffed Chicken Breast (so Easy!)
  1. Preheat the oven to 375 degrees F (191 degrees C).

  2. Use a sharp knife to cut a pocket in each chicken breast lengthwise horizontally, being careful not to cut all the way through.

  3. Season the chicken with salt, pepper, oregano, and paprika. Set aside.

  4. In a large bowl, combine the filling ingredients: chopped broccoli, shredded cheese, cream cheese, garlic powder, salt, and pepper.

  5. Divide the filling into 4 portions and stuff inside the chicken breasts. Secure the chicken closed with toothpicks.

  6. Heat the olive oil in a large oven-safe skillet over medium-high heat. Sear the chicken on both sides, about 2-3 minutes per side, just until browned. (The chicken does not need to cook through at this step, just get golden brown.)

  7. Transfer the skillet to the oven. Bake broccoli stuffed chicken for about 20 minutes, until cooked through. (The internal temperature of the chicken should reach 165 degrees F (74 degrees C) using a meat thermometer -- make sure to measure the temp of the chicken, not the filling.) Remove the toothpicks before serving.
