Rice Paper Omelette
  1. Lightly grease the pan and place a rice paper sheet.

  2. Add chopped onions and green chili, then crack 2 eggs directly on top and mix.

  3. Season with salt, pepper, and fresh coriander.

  4. As the eggs start to set, sprinkle shredded cheese and drizzle chili oil.

  5. Fold and serve - crispy outside, soft and cheesy inside!
