Sauté the onions on medium low in half the niter kibeh. Stir cook for around 20 minutes
Add the ginger garlic paste and more niter kibbeh if needed. Stir and cook another 5-10 minutes.
Stir in cubed beef, berbere spice and beef broth. Heat to boiling, reduce temperature and simmer covered for one hour, stirring occasionally. Season to taste with salt.
Once meat is tender, mix in potatoes and carrots. Cover and simmer until vegetables are cooked .
