High-protein Cottage Cheese Cinnamon Toast
  1. Mix together all the cinnamon-sugar ingredients.

  2. Whip the cottage cheese in a mini food processor until creamy.

  3. Combine the whipped cottage cheese, vanilla, and half the cinnamon-sugar. Spread onto bread, going all the way to the edges. (I like to toast sandwich bread first to make sure both sides crisp; airier bread is fine as-is). Sprinkle with remaining sugar.

  4. Air fry at 400°F until bubbling and starting to brown, about 5 minutes. (Or use toaster oven or broiler). Enjoy with fresh fruit!
