Depending on the size of the chicken, seasoning may vary! Feel free to adjust to your preference (taste as you go and add layers of flavor!)
For less heat, you can substitute the scotch bonnet for a tsp or two of cayenne pepper!
The chicken does not need long to cook, depending on the amount 45 minutes to an hour and 15 is plenty of time!
If your sauce does not thicken on its own, add a cornstarch slurry towards the end of the cook to help!
Add oil to a big pot and toast the curry powder.
Add the chicken to the pot, cook it for a couple minutes until you start to get a nice sear.
Cover the chicken with water and add the same seasoning from earlier.
Add the potatoes, carrots, bell peppers, and a Scotch bonnet.
Once it comes to a simmer, add the coconut milk.
Cover and let it cook.
