Stick some cocktail coupes in the freezer or fridge to chill.
Combine 2 parts honey with 1 part warm water in an airtight jar with a lid. Shake until combined. Use immediately or transfer to the fridge for up to 2 weeks.
Combine 2 parts white rum, 1 part fresh lime juice, and 1 part honey syrup in a cocktail shaker.
Add ice and shake for 20 seconds.
Strain into the chilled cocktail coupes and top each with sparkling wine.
Garnish each glass with a lime wheel.
