Cottage Cheese Egg Bites
  1. Preheat oven to 325℉.

  2. In a medium sized mixing bowl, crack and whisk eggs.

  3. Add in bacon, cottage cheese, shredded cheese, salt, and pepper. Mix to combine.

  4. Spray a 12 cup muffin pan with cooking oil.

  5. Equally distribute the egg mixture among the 12 muffin cups.

  6. Place a pan of water on the lower rack of the oven.

  7. Place the egg bites in the upper rack of the oven and bake 23-25 minutes.

  8. Use a toothpick to check for doneness. Toothpick should come out of the egg bite clean.

  9. Let the egg bites cool for a couple of minutes. Remove egg bites from the muffin pan before they completely cool.

  10. Serve and enjoy!
