  1. Dice the onion and cook in 2 tbsp of oil over medium heat for about 10 minutes until soft and translucent.

  2. Add the remaining ingredients and stir to combine.

  3. Simmer the sauce for 25 minutes, stirring occasionally.

  4. Strain the sauce through a sieve, reserving the onions and chipotle peppers for other uses.

  5. Allow the sauce to cool slightly before transferring to a bottle for storage in the refrigerator.
