Add the olive oil to a very large skillet and sauté the onions, garlic and adobo peppers for about 10 minutes until the onions are translucent.
Remove from skillet and place the mixture in your slow cooker or dutch oven.
Cook the ground meat and breakfast sausage completely in the same skillet, drain the fat, and place all of the meat in the slow cooker or dutch oven.
If using raw chuck roast, cut it into cubes and brown it in a cast iron skillet, then place it in the slow cooker or dutch oven.
If using smoked chuck, cut it into small pieces and add it to the slow cooker or dutch oven.
Add the tomatoes with juice, 1 beer, and 5 T of Meat Church Texas Chili Seasoning to the slow cooker or dutch oven and mix thoroughly.
Cook the chili on low for 6 - 8 hours, stirring periodically.
If using a smoker, cook at 225°F for 4-5 hours uncovered, stirring periodically, then cover and continue to cook for 2-3 more hours.
Remove from heat, allow to cool, garnish, and enjoy.
