Mexican Inspired Street Corn Hot Honey Bowl
  1. For the beef: Season the ground beef with salt, pepper, and taco seasoning. Add ¼ cup of water and cook until browned and cooked through.

  2. For the sweet potatoes: Spray a baking sheet with avocado oil spray. Toss the cubed sweet potatoes with salt, pepper, and 1 tsp of cornstarch. Roast at 400°F until tender and crispy, about 20-25 minutes.

  3. For the street corn salsa: In a bowl, combine the corn, blended cottage cheese, light mayonnaise, cotija cheese, lime juice and zest, diced jalapeños, chopped cilantro, and cubed avocado. Mix well.

  4. Assemble the bowl by layering the cooked beef, roasted sweet potatoes, and street corn salsa. Top with hot honey and enjoy.
