Roasted Pumpkin Frittata
  1. Roast the pumpkin until caramelized and sweet.

  2. Whisk the eggs in a bowl.

  3. Add the roasted pumpkin, pine nuts and feta to the eggs and mix well.

  4. Heat olive oil in a frying pan and pour in the egg mixture.

  5. Cook the frittata until set, then flip and cook the other side.
