Preheat oven to 375°F. Cover a baking sheet with parchment paper or a silicone mat and set aside.
In a large bowl, beat eggs and add in half of the cheddar cheese.
In a separate bowl mix the dry ingredients - almond flour, salt and baking powder.
Add the dry mixture to the egg mixture and stir to combine. The fold in the sausage, bacon and ham.
Mix to make a sticky dough. Then place big spoonfuls of the dough evenly on the prepared baking sheet. This recipe made 13 biscuits for me.
Top each cookie with the rest of the cheddar cheese. Bake for 8-10 minutes until golden brown and cooked through.
Let cool before eating. To freeze leftover biscuits, let cool completely then store in an airtight container or baggie and place in the freezer. To reheat place in microwave and cook for 30 - 60 seconds and let cool a bit before eating.
