Cut the chicken into pieces and seasoned with salt or pepper, cayenne or paprika and a touch of oil mix well.
Dice onion, mince ginger and garlic. Chilies if you're using them.
In coconut oil, cook and sear about five minutes cook first minute without disturbing it to get a nice sear.
Remove the chicken. Add coconut oil if needed and sauté onions, ginger, garlic, chilis.
Add in the coconut milk, curry powder, soy sauce, fish sauce. Let the sauce come together for about a minute.
Add in the chicken and stir. Adjust salt if needed.
Garnish with basil and chili flakes.
Serve over rice.
