Gf Protein Mcgriddle Muffins
  1. Preheat oven to 375.

  2. Cook the breakfast sausage in a pan for 5-7 minutes, breaking it up with a wooden spoon. Drain fat and add it to a large bowl.

  3. Add the pancake mix, eggs, almond milk, shredded cheddar cheese, and maple syrup. Stir to combine.

  4. Spray a 12-cup muffin tin with avocado oil. Divide the mixture between the 12 cups, filling almost to the top.

  5. Bake for 18-20 minutes until fluffy and cooked through. Let them cool for 10 minutes, then remove and enjoy with more maple syrup, if desired!
