Crispy Beef Tacos
  1. In a small bowl stir together the taco seasoning and set aside.

  2. Heat a large skillet over medium high and add in the oil, once hot add the diced onion and cook, stirring, until the onion just begins to brown, about 4-5 minutes. Add in the ground beef and break up the meat with a wooden spoon, stirring it into the onions.

  3. Cook the meat and onions, stirring and breaking up the meat, for 6-7 minutes until the meat is browning and releasing some juice.

  4. Reserve 1 Tbsp of the taco seasoning for the sauce and pour the remainder over the beef and onions. Stir to combine.

  5. Sprinkle the beef with cornstarch and add the water, reduce the heat to medium low and cook, stirring, until all the meat is saucy and coated and smells delicious. When the meat is fully cooked, set aside.

  6. Heat a clean large skillet over medium high and add about 2 Tbsp of oil for crisping the tortillas.

  7. Once shimmering, reduce the heat to medium. Place a tortilla into the oil and let fry for about 30 seconds, flip and spread shredded cheese over one side of the tortilla (about ¼ cup of cheese). Add a couple spoonfuls of taco meat and fold the tortilla over to close.

  8. Frythe tacos to golden brown, until the cheese is just melted, then remove to a paper towel lined tray.

  9. Serve with diced onion and cilantro to top and the spiced cream to dip into. Enjoy!
