Get some plain diced chicken thighs into a bowl and season it with onion powder, garlic powder, garlic and herb seasoning, salt and pepper, and finish it with cornstarch. Mix it up and set aside.
For the sauce, just add Mayo, sweet chili sauce, Sriracha, rice vinegar, or lemon juice for a tangy flavor. Mix it up and set aside.
To a pan, heat up some oil and drop in the chicken. They shouldn't take no longer than five minutes on each side, but be sure to cook them in batches because you don't want to overcrowd the pan.
Once cooked, add them to a wire rack so they can drain. If you want to get them extra crispy, then I recommend broiling them in the oven, and you'll get the best homemade chicken nuggets, I'm telling you.
Add them to a bowl, pour that sauce on top and mix it up. Make sure to leave no chicken uncoated.
Plate it over a bed of rice and there you go, you got Dynamite Chicken.
