Garlic Mushroom Rice
  1. Wash and soak the rice for 30 minutes.

  2. Heat oil in a pan over medium-high heat.

  3. Add the spring onions and fry for 1-2 minutes.

  4. Add the chopped garlic and sauté for 1-2 minutes.

  5. Add the sliced bell peppers and fry for 1-2 minutes.

  6. Add the sliced mushrooms and fry for 1-2 minutes.

  7. Add salt and red chili flakes to taste.

  8. Add the strained rice and 3 cups of water.

  9. Bring the water to a vigorous boil, then reduce the heat to low, cover and cook for 10 minutes.

  10. Add the lemon juice and black pepper, and continue cooking for 3-4 minutes or until the rice is completely done and all the moisture is dried up.

  11. Serve the delicious Garlic Mushroom Rice.
