Boil pasta according to package instructions until al dente. Drain and set aside.
In a large skillet, sauté sliced smoked sausage in olive oil until browned. Add minced garlic and cook until fragrant.
Pour in heavy cream, Parmesan cheese, Cajun seasoning, salt, and pepper. Stir until the sauce thickens.
Add cooked pasta to the skillet and toss to coat in the sauce.
Garnish with chopped parsley before serving.
