Parmesan Crusted Mini Potatoes
  1. Add potatoes to cold water, bring to a boil and boil for 6 minutes.

  2. Drain and rinse with cold water.

  3. Slice potatoes in half. Add potatoes to bowl, add oil and seasonings.

  4. Sprinkle ½ cup grated cheese over parchment paper, then add potatoes cut side down and press firmly into cheese.

  5. Add any remaining oil left in bowl and sprinkle with remaining cheese.

  6. Bake at 425 F for about 20 minutes or until potatoes are tender.

  7. Let sit on counter for 5 minutes to allow cheese to harder. Then serve crispy side up.
