Start by adding diced bacon into a large pot. Cook on medium heat until the bacon is rendered and crispy. Remove bacon and leave liquid in pot.
Add the ground beef and pork and allow to brown on one side for 3-5mins before flipping and breaking apart. Once almost fully cooked add in the Sazon seasoning packet, adobo, cumin and paprika. Cook until it is no longer pink and remove.
Add in all your diced veggies into the pot and cook for 5-8mins on medium heat until softened. Season the veggies with the adobo seasoning.
Then add the cans of diced tomatoes, crushed tomatoes and beans and some of your favorite beer. Give everything a good mix and taste to adjust your seasonings. Then add back in the ground beef and pork. Add in some beef broth if the chili is too thick. Cover and cook on low for 45-60mins.
Once done add in the cheddar cheese and light cream. Mix until the cheese is melted. This is optional but I like to serve mine over some elbow macaroni topped with some sour cream, more cheese and sliced jalapeños.
