Mix the balsamic, soy sauce, garlic and optionally some brown sugar/maple syrup and any dried or fresh herbs in an airtight container
Squeeze water from tofu and break into chunks or cut into cubes
Stir the tofu into the marinade and refrigerate from12-48 hours, shaking regularly to coat the tofu
Preheat oven to 375 and bake for 35-40 minutes until deeply golden brown
