Oat Flour Coconut Banana Bread
  1. Preheat the oven to 350 F.

  2. Spray a 9x5 loaf pan with avocado oil.

  3. Mash bananas and mix with all wet ingredients (greek yogurt, date syrup, avocado oil and vanilla extract).

  4. Add all dry ingredients, and stir them together.

  5. Pour the batter into the pan, and bake for 40 minutes.

  6. Turn the oven off after 40 minutes, but do not open the door.

  7. Leave the bread in the closed oven for 5 more minutes.

  8. Insert a toothpick in the center. If it comes out clean, remove the banana bread from the oven. If it does not come out clean, cover the loaf pan with tin foil and continue baking until the toothpick comes out clean.

  9. Let the bread cool and remove it from the pan.
