Double Garlic Soup
  1. Chop up the garlic scapes finely and mince 3 cloves ordinary garlic.

  2. In your pot, melt butter over medium-high heat. Add minced garlic and sauté until translucent, about 3 minutes.

  3. Add the sliced garlic scapes, thyme, salt and pepper, and sauté for 5 minutes.

  4. Add in diced potato and broth, reduce heat to medium, and simmer until scapes and potatoes are tender, about 20 minutes.

  5. If you would like a greener soup, add arugula or spinach after 15 minutes

  6. When the potatoes are tender and any greens are wilted, add cream, and purée the soup.

  7. Stir in the lemon juice and season with more salt and pepper. Garnish with nutmeg and thyme sprigs, and serve hot.
