Healthy Peanut Butter Cups
  1. In a large bowl add in your old fashioned oats, smooth/drippy peanut butter, maple syrup, coconut oil (melted), vanilla extract and salt. Mix well.

  2. Add your muffin liners to a muffin pan. Fill each liner about halfway with the oat mixture. Press down firmly so it's packed tightly in the cup. (The more time you spend pressing it down tightly, the better chance they will come out in perfect form!) I made about 6 cups with my mixture.

  3. Use the back of a spoon or your finger to make a small hole in the center of the cup. Pour ~½ tbsp of peanut butter into each hole, filling it up to the top.

  4. Drizzle your melted dark chocolate over the top and smooth out with the back of a spoon. Optional- sprinkle coarse salt on top.

  5. Pop the pan in the freezer for 15-20 minutes. You can eat them at this time but to get a better formed shape, let them sit the fridge for a few hours in a container.

  6. Keep stored in the fridge or freezer for best results.
