Keto Key Lime Bars
  1. Combine all filling ingredients in a blender or food processor. Blend for 30 seconds until completely smooth.

  2. Refrigerate for 20 minutes to allow the filling to thicken.

  3. Preheat oven to 350 degrees F. Line an 8x8 pan with foil or parchment paper.

  4. Combine the melted butter, almond flour and sweetener in a small bowl and press into the foil lined pan.

  5. Pre-bake crust for 7 minutes, it should not be firm just slightly beginning to brown around the edges.

  6. Remove crust and allow it to cool COMPLETELY.

  7. Pour in filling and bake 18-20 minutes until the center is set. Allow bars to cool completely.

  8. Using a mixer combine the heavy cream, lime juice, lime zest and sweetener and beat until stiff peeks form.

  9. Spread over the cooled lime bars.

  10. Place in the freezer for at least 20 minutes before slicing if you want to get nice clean slices.
