  1. Add oil to a pan and heat it. Add cumin, ginger and garlic, allow to sizzle.

  2. Add onions, fry until they turn golden, add eggs, tomatoes, turmeric , salt and chili.

  3. Fry everything together till the tomatoes turn soft and mushy, if needed sprinkle little water.

  4. Add garam masala, chili powder and pepper. fry everything together until the mixture is nicely roasted for about 2 to 3 minutes.

  5. Serve egg fry with rice, chapathi or even with bread or buns

  6. Make some gashes on your boiled eggs. Heat ghee in a pan. Add 2 to 3 crushed garlic cloves and boiled eggs.

  7. Fry the eggs until blistered stirring with a long spatula. Add curry leaves and green chilies (optional).

  8. Reduce the heat to low or turn off the heat if your pan is too hot. And add ½ teaspoon red chilli powder,¼ teaspoon salt, ¼ teaspoon cumin powder, ¼ teaspoon coriander powder and a pinch of turmeric. If you want you may add ⅛ teaspoon garam masala and ⅛ teaspoon fennel powder. too.

  9. Stir the eggs with the spices. If you continue to cook the spices will burn and taste bitter. Taste test and add more salt or spices if you want. Your boiled egg fry is ready.
