Roasted Cauliflower Salad (loaded Style!)
  1. Preheat the oven to 400 degrees F (204 degrees C).

  2. In a large bowl, toss the cauliflower florets with olive oil, salt, and pepper.

  3. Arrange the cauliflower in a single layer on a large baking sheet. Roast in the oven for 20-25 minutes, until tender and browned on the edges.

  4. When the cauliflower is done, cool completely.

  5. Meanwhile, wipe down the bowl from the cauliflower. Add all the dressing ingredients and whisk together.

  6. Add the cooled cauliflower, bacon, cheese, and green onions. Mix together with the dressing.

  7. You can serve immediately, but for the best flavor, chill for 2 hours before serving.
