  1. Wash and soak rice for a while and cook in about 2.5 cups water till al dente. Drain the rice and cool completely.

  2. Heat a pan with butter or oil, fry cashews till lightly golden, add raisins and then garlic. Saute until it smells good.

  3. Add chilli, bell peppers, spring onions. Fry until the peppers are lightly cooked but crunchy.

  4. Add soya sauce, vinegar, salt and curry powder if using. Mix well. Add in the pineapple chunks.

  5. Saute the pineapples for about 2 minutes. Add the rice, little oil and then the chopped cilantro.

  6. Toss everything well and fry for 2 to 3 minutes.

  7. Serve pineapple rice hot or warm.
